Fluffy Sicilian-style Pan Pizza (V)

My favorite dinner or weekend lunch! So delicious yet simple. I hope you love it!

For the dough:

  • 1 cup filtered water heated to ~105°F
  • 1 packet of dried instant yeast
  • 1 tbsp coconut sugar
  • 2.5 – 3 cups of unbleached all purpose flour
  • 3 tbsp olive oil
  • 1 tbsp salt .
  • Place the heated water in a large mixing bowl with a dough hook attachment and add the yeast. Let stand for 10 minutes.
  • Add in the remaining ingredients and stir on low until the dough comes together (~5 minutes). Add additional flour if the dough is too loose or additional water if the dough is too dry. Dough texture should be tacky but not stuck to the sides of the bowl.
  • Transfer the dough to an oiled bowl, cover, and let rise for about an hour.
  • Once the dough has doubled in size, pat it into a 9×13 inch baking dish with sides (prepared with parchment paper or olive oil).
  • Preheat the oven to 450°F and prepare toppings.

Topping suggestion:

  • Sprinkle the dough with garlic granules, onion granules, dried basil, and dried oregano.
  • Evenly spread 1 – 1.5 cups of pizza sauce or Sicilian Gravy.
  • Top with 8-10 sliced mushrooms and 2 thinly sliced cloves of garlic.
  • Sprinkle over additional salt and dried Italian herbs to taste.
  • Bake for 25-30 minutes or until the crust is golden brown.
  • Cool for 10 minutes and top with fresh basil.
  • Enjoy!
